Why should most food be eaten boiled or fried?

People originally, like all animals, ate food raw. However, our ancestors several thousand years ago learned to control fire to keep warm on cold nights, and then, probably by accident (for example, by dropping meat into the fire), they tried cooked food and noticed the advantage of boiled food over raw food. And so over the centuries, people began to cook most of the food, so our bodies have lost the ability to digest raw food such as meat, grains and other plants.
