Carboxylic acids, their use in the food industry.

Citric, fumaric, malic, succinic and itaconic acids are multifunctional carboxylic acids. Their current industrial applications include food acidulants and polyester resin production. They can also be used as building blocks for the synthesis of esters and biodegradable polymers. Commercially, maleic anhydride is a precursor for the production of fumaric (trans-butenedioic acid), malic (hydroxysuccinic acid) and succinic acid.
