The role of enzymes in the national economy

Enzymes are important in commercial processes because they speed up specific chemical reactions to produce a beneficial product or effect. Enzymes are sometimes used when they are still stored inside cells; other processes require the use of an enzyme, which must be extracted from the original cells and purified. In both cases, the efficiency of the process can be increased by trapping cells or purifying an enzyme in an insoluble substance. This is called the immobilization enzyme.
