What, apart from the composition of molecules, do the properties of a substance depend on?

The properties of a substance also depend on its state of aggregation. For example, all known water can be both a solid and a gas. With the same composition of molecules, the properties of water in the solid, liquid and gaseous state are completely different. Also, the properties of a substance may depend on the location of the molecules. So, coal, graphite and diamond are one and the same substance carbon. But in all these types of molecules are located in different ways, due to which the substance acquires completely different properties.
