Saliva also contains enzymes: amylase, maltase, which are involved in the process of digesting food, thus converting polysaccharides into monosaccharides, that is, the conversion of complex carbohydrates into simple ones, where they are further absorbed in the intestine. The most important enzyme in saliva is ptyalin, which in turn is involved in the breakdown of carbohydrates.
