The evaporation of water from leaves has two important functions.
1. Evaporation acts as a “pump” for the movement of water from the roots to the top of the plant. With the help of water, nutrients obtained by the roots from the soil are transferred to the branches and leaves. Once food is delivered, excess water evaporates.
2. The second important role of evaporation in plants is cooling. Since water has a large heat capacity, therefore, when moisture evaporates, water droplets take heat, thereby cooling the leaves. This process works most effectively at high air temperatures and sufficient moisture in the soil.
