Wheat seed structure is based on endosperm. This is the core of the mealy structure. In its central part there are large, thin-walled, usually irregularly shaped cells. With distance from the center, the cells acquire a rectangular shape. Inside the cellular structures are proteins that form a continuous matrix system with starch granules.
