Why did the citizens of the policies of Greece voluntarily go to mortal combat?

Greece in the 5th century BC was in a state of war with the Persian Empire, however, at that time many Greek polis surrendered without a fight and submitted to the Persians. A different position was taken by Sparta and Athens, whose citizens joined the troops and fought with the Persian armies in order to prevent the capture of their lands.
