Why is food stored in the refrigerator?

Everything that we eat necessarily includes a basic set of organic compounds – proteins, fats and carbohydrates. Some of these substances are unstable to the oxygen present in the atmosphere and easily react with it, in other words, they begin to decompose (rot). It is known that an increase in the temperature of the medium leads to an increase in the reaction rate (Arrhenius law). Thus, storing food in the refrigerator slows down unwanted decay processes and increases their shelf life.
