Why is the reaction of alkaline hydrolysis of fats called saponification?

We know that soap is a sodium and potassium salt of long chain fatty acids. When triglycerides in a fat / oil react with aqueous NaOH or KOH, they convert to soap and glycerin. It is also called alkaline ester hydrolysis, a soap-forming reaction known as the saponification reaction.

Ethyl acetate reacts with NaOH-ethyl alcohol and sodium acetate. Here, sodium acetate is the indicated cooking material. Thus, the above reaction is known as the saponification reaction.
